Chicken Foodle Soup
Ingredients
• 3 tbsp. olive oil
• 5 oz. onions, minced
• 1 tsp. salt
• 5 oz. carrot, shredded
• 5 oz. celery, minced
• 1 bay leaf, dried or fresh
• 1 tsp. coriander, whole
• 1 tsp. pepper, whole peppercorns
• 6 cups water
• 4 tsp. salt
• 16 oz. fava bean
• 10 oz. chicken breast, cooked, sliced into chunks
• 2 oz small elbow macaroni, dried (or favorite pasta) Optional
Directions
Heat a 4-quartsautépan over medium heat;once pan is warm add oil. Add onion and salt. Once onions are well sautéed (3-5minutes) add carrots and celery. Heat mixture until carrots and celery are slightly soft (6minutes).
Add water, spices and salt to mixture. Add fava bean and chicken; bring mixture to rolling boil (6-10 minutes). Add remaining noodles (optional) and boil on low (8 minutes). Serve hot with crusty bread.
